How To Make Grilled Jerk Lobster Tails

There’s something magical about the combination of sweet, succulent lobster and the bold, fiery flavors of Jamaican jerk seasoning. When you add a smoky char from the grill, you have a dish that’s nothing short of a seafood flavor explosion. Today, I’m sharing my recipe for Grilled Jerk Lobster Tails, a dish that’s perfect for a special occasion or when you just want to treat yourself to something extraordinary. Paired with my Jamaican Curry Shrimp Pigeon Peas and Rice, this Caribbean feast will transport your taste buds straight to the islands.

The Star of the Show: Grilled Jerk Lobster Tails

For this recipe, I used spiny lobster tails, which are known for their firm, sweet, and meaty texture. Splitting the tails in half not only makes them easier to grill but also allows the jerk seasoning to penetrate every bite. The key to this dish is my dry Jamaican jerk seasoning, a blend of scotch bonnet peppers, allspice, thyme, garlic, ginger, and a few other essential ingredients that create that iconic jerk flavor. Once the lobster tails are seasoned, they hit the grill, where they’re basted with a luscious mixture of melted butter and jerk marinade. The flames from the Weber Kettle grill kiss the lobster, infusing it with a smoky depth that complements the spicy, aromatic jerk seasoning. The result? A dish that’s rich, flavorful, and utterly unforgettable.

 The Perfect Pairings

While the grilled jerk lobster tails are undoubtedly the star, no Caribbean feast is complete without a few supporting acts. Here’s how I rounded out this meal:

  1. Jamaican Curry Shrimp: This dish, which you can find on foodtoktv.com, is a creamy, fragrant curry loaded with plump shrimp and tender vegetables. The curry’s warmth and richness balance the heat of the jerk seasoning, creating a harmonious blend of flavors.
  1. Pigeon Peas and Rice: A classic Caribbean side dish, this recipe is a must-have. The earthy pigeon peas, coconut milk, and fragrant herbs provide a comforting base that ties the entire meal together.

Together, these dishes create a symphony of flavors and textures that celebrate the vibrant cuisine of the Caribbean.

 Why This Combo Works

The sweet, meaty lobster is the perfect canvas for the bold, spicy jerk seasoning. The natural richness of the lobster balances the heat, while the smoky char from the grill adds depth. When you take a bite of the lobster alongside the creamy curry shrimp and the aromatic pigeon peas and rice, every element complements the others. It’s a meal that’s greater than the sum of its parts—a true celebration of Jamaican flavors.
