Prepare your chicken:

- Slice chicken into bite size pieces
- Place chicken in a bowl, add 1-2 tbsp cornstarch and water
- Massage meat until no water or cornstarch is visible
- Season chicken with a pinch of salt and pepper and rice cooking wine
- Use hands to mix well until ingredients are fully incorporated
- Allow to marinate for 20 mins
Ingredients:
- 2 cups cooked rice
- 2 cloves garlic, minced
- 2 tbsp fried garlic
- 1 tablespoon soy sauce
- 1 teaspoon oyster sauce
- 1/2 teaspoon sesame oil
- 1 egg, beaten
- 2 green onions, chopped
- Garlic infused oil
Instructions:
- Prep the Rice: If your rice is cold, warm it up in the microwave or on the stovetop.
- Heat the Oil: Heat a griddle over medium-high heat with a drizzle of garlic oil.
- Scramble the Egg: Add the beaten egg to the hot pan and scramble it until just set. Remove from the pan and set aside.
- Sauté the Garlic: Add the fresh minced garlic and the fried garlic to the griddle and sauté until fragrant.
- Cook the Chicken: Add chicken to the griddle and cook before combining with the sautéed aromatics.
- Add the Rice: Add the cooked rice to the griddle and stir-fry until heated through.
- Season and Mix: Add the soy sauce, oyster sauce, and sesame oil to the rice and stir to combine.
- Add the Egg: Add the scrambled egg to the rice and stir to combine.
- Serve: Serve immediately, garnished with chopped green onions.
Tips for the Perfect Garlic Fried Rice:
- Use Day-Old Rice: Day-old rice tends to fry up better, as it’s drier and less sticky.
- Don’t Overcrowd theGriddle/Pan: If you overcrowd the griddle, the rice will steam instead of fry.
- Medium High Heat: Cook the rice over medium high heat to achieve a crispy texture.
- Experiment with Veggies: Add your favorite vegetables like peas, carrots, or corn for a colorful and nutritious meal.
