The magic of fried garlic lies in its ability to transform a potentially overpowering ingredient into a subtle yet flavorful enhancer. As the garlic cooks, its natural sugars caramelize, creating a rich, nutty aroma and a mellow taste. This caramelization process not only crisps the garlic but also intensifies its flavor, making it a versatile addition to countless recipes.

One of the most important things to remember about fried garlic is that the oil it’s cooked in should never be discarded. This oil, infused with the essence of garlic, is a culinary treasure. It can be used to sauté vegetables, flavor sauces, or even drizzle over finished dishes for an extra burst of garlic goodness and so much more. 

To make fried garlic, simply:

 Heat oil: In a small skillet or pot, heat a neutral oil like vegetable or grapeseed oil over medium heat. Heat should be reading between 300-350 degrees Fahrenheit. Do like I did in this video and use beef tallow. 

 Add garlic: Add roughly chopped to the hot oil. A food processor is excellent for chopping the garlic. 

WARNING!! Cut the heat off before you add the garlic. The excess moisture in the garlic and the hot oil, can cause your oil to overflow and this could be at worst, dangerous, and at best, very messy. Be careful. When the initial reaction between the garlic and the oil has subsided, turn the heat back on and continue to cook.

 Cook: Cook the garlic, stirring occasionally, until it turns golden brown and fragrant.

 Remove: Remove the garlic from the oil and set aside. Pour through a strainer, saving the oil and separating the garlic bits. 

Once your garlic is fried to perfection, you can use it in a variety of ways:

 Stir-fries: Add fried garlic to your favorite stir-fries for a quick and easy flavor boost.

 Pasta: Toss fried garlic with cooked pasta and your favorite sauce for a delicious and satisfying meal.

 Soups: Add fried garlic to soups and stews for a depth of flavor that will leave your taste buds wanting more.

 Rice: Cook rice with fried garlic for a simple yet flavorful side dish.

 Sauces: Use fried garlic to flavor sauces like aioli, pesto, or marinara.
