If you didn’t already believe that the Weber Kettle is the most versatile grill ever made, here is another thing that it can be used for. This recipe was inspired by a post I saw on Facebook about a year ago. I have tried it several ways and it works very well. This has proved many doubters wrong, including myself. No way did I think we could get chicken to look fried and taste crispy coming off the grill. If you are a fan of fried and grilled chicken, here is a way to put them together and see how you like it. I would love to see your posts on socials if you try it, or if you just want to send me an email with your feedback. I have tried the buttermilk marinade as well as the pickle juice brine. Both profiles have their place and they are both good, so pick one. The spices remain the same so just pick which base flavor you would like. Try both and see how your family feels about it.
Marinade
Pickle Juice(Buttermilk is an alternative)
Batter mix
Fried chicken dry batter mix
Sauce
1 cup General BBQ sauce
1 tbsp Scotch Bonnet puree(1 pepper) or my jerk marinade as I did in this recipe
Brine chicken for about 8 hrs. You can use whatever your favorite poultry seasoning is for the recipe. My dry jerk seasoning pairs very well with chicken and is now sold on my website store. My wet Jerk marinade recipe is still available for free on my website, and all my social media pages. Remove chicken from the brine and remove the excess. Place straight into a bowl with your dry batter mix and toss until coated. Remove and place on a wire rack. Rest in the refrigerator for 30-45 minutes.
Using the Weber Kettle and the vortex, run your grill on high temp, 500-600 degrees. Place chicken around the vortex and let cook for 20 minutes. At the 20-minute mark, spray the chicken with some duck fat. Cover and let cook for an additional 20 mins. They should be done in 40-45 minutes.
