How To Make Cornbread On Your Weber Kettle

Skillet Cornbread on the Weber Kettle

There’s something magical about the combination of cast iron, cornbread, and the smoky aroma of a Weber kettle grill. If you’ve never tried cooking cornbread indirectly on your grill, you’re in for a treat. Not only does it free up your oven for other dishes, but it also infuses the cornbread with a subtle smokiness that elevates this popular side dish to a whole new level. And if you’re looking to master the art of cooking with fire, my book, Wrangling Fire: The Backyard BBQ Warrior’s Ultimate Guide To Fire Management, available on Amazon, is here to help you every step of the way.

Why Cook Cornbread on the Weber Kettle?

Cooking cornbread on a Weber kettle grill is a game-changer. The indirect heat method ensures even cooking, while the cast iron skillet gives you that perfect golden crust. Plus, the grill adds a hint of smokiness that you just can’t get from an oven. It’s a simple yet impressive way to take your cornbread to the next level. Great to pair with your smoked brisket or a heaping mound of moist pulled pork.

This is an extremely simplified version of a cornbread recipe since I use the boxed mix. This is mainly because I am not a baker, and I don’t like all the precise measuring baking requires. This is very easy and everyone who has access to the ingredients below will be able to put this together. Here’s how to make this delicious side dish:

 Ingredients:

2 boxes jiffy honey cornbread

1 can cream corn

1 can sweet corn drained

1 stick softened butter

1 additional stick of butter

¼ cup of milk

2 eggs

This book is my invitation to share the knowledge and experience I’ve gained. It guides those who yearn to tame the flame and elevate their grilling game. Whether you’re a seasoned griller looking to refine your skills or a novice just starting, you’ll find valuable insights and practical tips within these pages.

Instructions:

In a 12-inch skillet, melt ½ stick of butter while the grill is preheating. Mix in a bowl corn, cornbread mix, 1 stick melted butter, eggs, and ½ your milk mixture. Mix until well combined. Add more milk if needed. This should be a thick batter consistency. Pour batter in the hot skillet and bake at 350° in the smoker until a toothpick comes out clean. Around 45-55 mins. When finished, melt the remaining ½ stick of butter and glaze the top of the cornbread and the edges.
