How to make a Seafood Dirty Rice

Royal Dirty Rice: Peasant food, fit for a King.

This  “Royal Dirty Rice” takes the classic dish to new heights by incorporating a medley of rich seafood. The result is a flavorful and decadent meal that’s perfect for a special occasion. A one-pot meal that was inspired by peasants, but is fit for a king. 

Royal Dirty Rice 

1 lb ground beef

1 lb andouille sausage diced

2 lbs jumbo uncooked shrimp

1 lb lump crab meat

1 medium onion diced

1 bell pepper diced

1 cup celery diced

1 bulb garlic minced

 Tropical Zinger seasoning to taste

The Blaxican to taste

1/2 teaspoon kosher salt

4 cups jasmine rice uncooked

6 cups seafood stock

chopped green onion or parsley for garnish

In a Dutch oven, brown meat together. Remove meat from heat. Sauté garlic and onion until fragrant, adding a pinch of salt. Add meat back to the pan and then add peppers and celery. Cook for 5 minutes on medium heat and then add your rice. Incorporate all the ingredients while using the rice to scrape the fond off the bottom of the pan. Add beef stock and then cover to simmer for 15 minutes on medium low heat. Pan sear shrimp and add to the  rice and cook for an additional 5 minutes . When rice is fluffy and properly cooked, turn the stove off and let sit on the stovetop for a few minutes. Serve and enjoy. 

Instructions:

  1. Sauté the Aromatics: Heat a large Dutch oven over medium heat. Add the sausage and ground beef and cook until browned.
  2. Deglaze the pan: Use stock to deglaze the pot. Use enough liquid for a 1 cup rice to 11/2 cup liquid ratio. Add in peppers and any other veggies you desire at this time and bring to a boil. Season to taste right here. For this rub, I used my Blaxican fajita rub but any seasoning blend you want to make will work. 
  3. Combine Ingredients: Stir in the rice, diced tomatoes, parsley, crab meat and fish filet. Bring to a simmer.
  4. Simmer and Cover: Reduce heat to low, cover, and simmer for 15 minutes. Add in seasoned shrimp at this point and let it cook for 5 more minutes or until the rice is tender and the liquid is absorbed. This should be enough time to cook the shrimp
  5. Stir in Seafood: Stir in the shrimp while you fluff the rice and let the pot stay covered for about 5 minutes. 

Serve immediately. Garnish with additional chopped parsley, if desired.

Tips & Variations:

  • Spice it Up: Add a pinch of red pepper flakes for extra heat.
  • Add Some Greens: Stir in a handful of chopped spinach or kale for added nutrients.
  • Make it Heartier: Use coconut milk for a richer creamy texture instead of stock.
