
The Ultimate Smash Burgers Recipe: The Seven Layer Slayer Double Patty Smash Burger

There’s nothing quite like a perfectly crafted smash burger—crispy edges, juicy interior, and loaded with bold toppings. Today, I’m sharing my ultimate smash burger recipe, featuring 4oz prime rib slider patties seasoned with the Blaxican Fajita Seasoning, melted smoked gouda cheese, a homemade burger sauce, two slices of crispy bacon, and a spicy-sweet red pepper jelly bacon jam. And because we’re not monsters, we’ll add a fresh slice of tomato for balance.
Full disclosure, I did not make the red pepper jelly; it was a gift from my friend Carrie from Queen G’s Texas Kitchen. As soon as a video becomes available, I will share it with you all.
Let’s dive in!
Ingredients
For the Smash Burgers:
- 1 lb prime rib ground beef(formed into four 4oz balls)
- Blaxican Fajita Seasoning(or your favorite fajita/steak seasoning)
- 4 slices smoked gouda cheese
- 2 brioche burger buns, toasted
- 1 large tomato, sliced
For the Homemade Burger Sauce:
- ½ cup mayonnaise
- 2 tbsp ketchup
- 2 tbsp pickle juice
- 1 tsp Worcestershire sauce
- 2 tbsp red pepper jelly
For the Red Pepper Jelly Bacon Jam:
- 6 slices thick-cut bacon, chopped
- ½ cup red pepper jelly
- 1 small onion, finely diced
- 2 cloves garlic, minced
- ½ cup brown sugar
-½ cup honey
- 1 tsp crushed red pepper flakes(optional for heat)
Instructions
1. Make the Bacon Jam (Do This First!)
1. In a skillet over medium heat, cook the chopped bacon until crispy. Remove and set aside, leaving about 1 tbsp of bacon fat in the pan.
2. Add the diced onion and sauté until soft (about 5 minutes).
3. Stir in the garlic, red pepper jelly, honey, sugar, and red pepper flakes. Simmer for 5-7 minutes until it has thickened.
4. Add the bacon back in, stir, and remove from heat. Set aside.
2. Prepare the Burger Sauce
Mix all sauce ingredients in a bowl until smooth. Refrigerate until ready to use.
3. Smash & Cook the Burgers
1. Heat a cast-iron skillet or griddle over medium-high heat until smoking hot.
2. Place a 4oz beef ball on the skillet and immediately smash it flat with a spatula (or use a burger press for even thinner patties).
3. Season generously with Blaxican Fajita Seasoning(or your favorite seasoning).
4. Cook for about 2 minutes until the edges are crispy, then flip.
5. Immediately add a slice of smoked gouda and let it melt while the other side cooks (another 1-2 minutes).
4. Assemble the Ultimate Smash Burgers
1. Toast the brioche buns lightly on the griddle with the burger grease.
2. Spread a generous layer of burger sauce on the bottom bun.
3. Add two cheesy smash patties, then top with a spoonful of bacon jam and your sliced bacon..
4. Add a seasoned slice of tomato for freshness.
5. Top with burger sauce and crown it with the top bun and press gently.
