For the recipe I'm sharing, I used Split Chicken breasts as the meat which we grilled up over charcoal on the Weber kettle. Tacos were dressed with black refried beans, guac, salsa, chicken slices, cotija cheese and a drizzle of Mexican Crema.

🛒 Ingredients
2 lbs Split Chicken Breasts (or your protein of choice)
½ cup Olive oil
½ cup Soy sauce
3 tbsp Brown sugar
3 tbsp Fresh minced garlic
Juice of 2 Limes
Zest of 1 Lime
½ cup Fresh orange juice
1 bunch Fresh cilantro, chopped
2 tbsp Blaxican Fajita Seasoning
1 tbsp Salt and pepper (to taste)

📝 Step-by-Step Instructions
1. Build the Flavor Base
In a large bowl, whisk together the olive oil, soy sauce, brown sugar, and minced garlic until the sugar begins to dissolve.
2. Add the Fresh Elements
Whisk in the lime juice, lime zest, fresh orange juice, fajita seasoning, chopped cilantro, and salt and pepper. Mix until fully combined.
3. Marinate
Add your chicken (or chosen meat) to the bowl, tossing well to ensure every piece is evenly coated. Cover and refrigerate for at least 2 hours (overnight is highly recommended for maximum tenderness and flavor infusion!).

4. Grill & Rest
Remove the meat from the refrigerator 20–30 minutes before cooking to take off the chill. Grill over high heat until it reaches a safe internal temperature (165°F for chicken). Transfer to a cutting board and let it rest for 5–10 minutes before slicing thinly against the grain.

💡 Tips for Success
Don't Skip the Rest: Letting the grilled meat rest for 5 to 10 minutes before slicing keeps the juices trapped inside, keeping your meat tender and juicy.
Always Slice Against the Grain: Look closely at the muscle fibers on your meat and slice perpendicular to them. This breaks up tough fibers and guarantees a melt-in-your-mouth texture.

Char Your Tortillas: Before serving, throw your corn or flour tortillas directly onto the hot grill grates for 10–15 seconds per side to warm them up and get a light, smoky char!
