Suya Spiced Smoked Duck Fried Rice

Ingredients:
1 ½ cups cooked smoked duck, shredded or cubed (leftover suya-spiced duck works great!)
3 cups cooked jasmine rice (day-old works best)
2 eggs, beaten
1 shallot, finely diced
2 tbsp fried garlic (Fried garlic recipe here)
1 cup canned corn
½ cup frozen peas & carrots (optional)
2 scallions, sliced (whites and greens separated)
4 tbsp low-sodium soy sauce
1 tsp sesame oil
2 tbsp garlic oil
1 tsp suya spice (or more to taste)
Salt & pepper to taste
Lime wedges & cilantro (for garnish)
Instructions:
1. Prep the Duck & Rice
If using leftover smoked duck, pull the meat off the carcass and cut into bite-sized pieces. Toss with a sprinkle of suya spice for extra heat.
Use day-old rice for best results—it fries better and doesn’t clump.
2. Heat the Griddle
Preheat your Weber Slate griddle over medium-high heat until smoking hot.
Add garlic oil and swirl to coat.
3. Scramble the Eggs
Pour in the beaten eggs and scramble quickly. Once just set, remove and set aside.
4. Sauté Aromatics
Add the onion, garlic, ginger, and scallion whites, stirring until fragrant (about 1 min).
Toss in the peas & carrots and cook for another minute.
