Smoked Sausage, Peppers, and Onions Stir-Fry
This quick and easy stir-fry is a great way to let the natural flavors of the smoked sausage and fresh vegetables shine without needing extra seasoning.
Ingredients
2 lbs smoked sausage, sliced
½ sweet onion
½ red bell pepper
½ green bell pepper
½ yellow bell pepper
½ orange bell pepper
1 tbsp bacon grease (or preferred cooking fat)
Cooked rice for serving
Instructions
1. Prep the Pan: Heat your griddle or skillet over medium heat.
2. Add Fat: Add a generous portion of bacon grease to the pan.
3. Sauté Onions: Add the onions first, cooking them until they are wilted and slightly translucent.
4. Brown Sausage: Add the sliced smoked sausage to the pan. Cook until you get a nice brown sear on both sides.
5. Toss in Peppers: When the sausage is almost finished, add in all the bell peppers.
6. Final Sauté: Stir everything together until the peppers are just slightly cooked. Keeping them al dente provides a nice crunch, but you can cook them longer if you prefer them softer.
7. Serve: Serve hot over a bed of fluffy rice.
