Sizzling Griddle Beef and Veggie Stir-Fry

Taking stir-fry out of the indoor skillet and onto a hot flat-top griddle changes the game entirely. The massive surface area and intense, direct live-fire heat allow you to get that authentic restaurant-style sear on thin velveted beef without crowding the pan or steaming the meat.

Ingredients
The Fresh Produce & Veggies
4 cups Broccoli florets
1 cup Snow peas, trimmed
1 can (15 oz) Cut corn, drained thoroughly
½ medium Yellow onion, chopped
1 Bell pepper, chopped
2 tbsp Garlic, minced
½ cup Green onions, chopped (for garnish)
3 tbsp High-smoke-point oil (avocado or peanut oil), divided
3 lbs sirlois roast sliced thin

The Stir-Fry Sauce
¼ cup soy sauce
⅛ cup rice cooking wine
1 tbsp chili oil
1 tbsp chili crisp
1 tbsp shrimp paste
2 tbsp olive oil
2 tsp ponzu sauce
2 tsp hoisin sauce
1 tsp toasted sesame oil
Whisk together the stir-fry sauce ingredients and set aside.
Step-by-Step Cooking Guide
Step 1: Velvet the Sirloin
Slice the sirloin roast into paper-thin strips against the grain. Mix thoroughly the meat, 3-4 tbsp of the stir-fry sauce with the velveting ingredients until the liquid is absorbed. Cover and let rest in the refrigerator for 30 minutes. This velveting process locks in moisture and guarantees melt-in-your-mouth tender beef under high griddle heat.
Step 2: Fire Up the Griddle
Preheat your flat-top griddle to medium-high heat (around 400°F–425°F). Squirt a light layer of high-smoke-point oil across the surface and spread it with your spatula.
Step 3: Sear the Beef
Spread the velveted sirloin strips in a single layer across the hot side of the griddle. Let them sear undisturbed for 60 to 90 seconds to build a caramelized crust, then flip and toss rapidly with your spatulas until cooked through (about 2–3 minutes total). Move the beef to the cooler zone or warm side of the griddle.
Step 4: Sauté the Core Veggies
Add another drizzle of oil to the main cooking surface. Toss on the chopped onion, broccoli florets, snow peas, drained cut corn, and minced garlic. Cook for 3–4 minutes, tossing continuously using dual spatulas to achieve a light, blistered char while keeping the broccoli vibrantly green.
Step 5: Add Bell Peppers & Combine
Bring the cooked beef back into the center of the veggie mixture. Add the chopped bell peppers last—adding them in the final minute ensures they heat through while retaining a crisp, snappy crunch that contrasts perfectly with the tender sirloin.
Step 6: Sauce & Garnish
Pour the stir-fry sauce directly over the beef and vegetable mix on the griddle. Toss vigorously for 1 minute as the sauce bubbles and glazes every ingredient.
Remove from the griddle, pile high on a serving platter, and finish with a generous garnish of chopped green onions and toasted sesame seeds.
