Homemade Hybrid Tortillas
These Homemade Hybrid Tortillas combine both into one dough—offering that authentic corn taste with the elasticity to hold up to heavy, juicy fillings without cracking. Paired with some lengua and you got the ultimate Mexican experience at home.

Ingredients
For the Hybrid Tortillas
1 cup corn flour (Maseca / masa harina)
½ cup all-purpose flour
1 pinch sea salt
1 cup hot water (plus extra as needed to hydrate)
Step-by-Step Instructions
1. In a large mixing bowl, whisk together the corn flour, AP flour, and salt.
Pour in the hot water a little at a time while mixing. The hot water helps gelatinize the corn starches, making the dough pliable.
Knead the dough directly in the bowl, running it through your fingers to check consistency. Add small splashes of water until the bowl is wiped clean by the dough.
The dough should feel tacky but not sticky. Roll a small portion into a ball and press it firmly between two fingers. If the edges don't crack, your hydration is spot-on.
Cover the dough with a damp towel and let it rest for 15 minutes.
2. Portion the rested dough into 1 oz balls.
Using a tortilla press lined with a split ziplock bag or parchment paper, flatten each ball into a thin disk.

Pre-heat your comal or cast-iron griddle over medium-high heat.
Place a tortilla onto the hot comal:
First Cook: 30–45 seconds until it releases easily.
Flip: 45–60 seconds on the second side until light char spots form.
Final Flip: 15–20 seconds on the first side. Give it a light press with a clean towel to encourage a nice steam puff.
Transfer cooked tortillas immediately into a tortilla warmer or clean towel to trap the steam and keep them super pliable.
