Grilled Peach Cobbler
- 6 ripened peaches (Peeled and quartered)
- 1 cup brown sugar
- 8 tbsp butter or shortening
Batter
- 1 cup flour
- 1 cup sugar
- 2 tsp baking powder
- ¼ tsp salt
- 1 can of evaporated milk
Directions
Over hot coals, grill up peeled and quartered peaches. Just grill marks and light charring. Slice peaches and put them in a cast iron pan over the fire with brown sugar. Cook over high heat until peaches are slightly soft and the sugar makes a rich syrup. Mix all batter ingredients in a separate bowl. In a 12-inch cast iron skillet, melt butter. Remove from the smoker and pour batter into the hot skillet. Use a spoon or spatula to spread the Batter around. Spoon peaches and syrup into the batter as evenly as possible. Top with ground cinnamon. Cook in smoker around 350-375 degrees for 40 minutes. Remove from the smoker and serve warm. Topped with whipped cream or vanilla ice cream.
