Fire Roasted Mango Salsa Recipe

Fire Roasted Mango Salsa


1 large ripe Mango

1 jalapeño 

2 large beefsteak tomatoes

¼ red onion

½ bunch Cilantro

3 tbsp sugar

2 tbsp Kosher Salt

1 head of garlic

 

Cut up mango in large slices with skin on. Cut tomatoes and onions in quarters. Roast veggies on grill over open flame to blister skin. You can remove the blistered skin if you'd like, I don't. Remove seeds from peppers and tomatoes. Place in a food processor or molcajete all the ingredients except the mangoes. Chop to the consistency you like. Add chopped cilantro. Then add mangoes and lightly chop to incorporate the Mango. Serve and enjoy.
