🍚 Cilantro Lime Rice

This recipe yields a fragrant and flavorful side dish, perfect for pairing with tacos, grilled chicken, fajitas or burritos.

📝 Ingredients


 Jasmine Rice  2 cups   

 Water  3 cups   

 Butter  1/2 stick (4 tbsp)   

 Fresh Chopped Cilantro  3 tbsp  Plus more for garnish, if desired. 

 Lime Juice  Juice of 2 limes  Freshly squeezed is recommended. 

 Salt  To taste  About 1 tsp, depending on preference. 

👩🍳 Instructions

  Boil Water: Bring the 3 cups of water and salt (to taste) to a boil over medium heat in a medium-sized pot with a tight-fitting lid.

  Add Rice & Butter: Once the water is boiling, add the 2 cups of unwashed jasmine rice and the 1/2 stick of butter. Stir gently to combine.

  Return to Boil & Reduce: Allow the mixture to return to a boil (it should foam up slightly). Once boiling again, immediately reduce the heat to a low simmer and cover the pot with the lid.

  Cook Rice: Set a 15-minute timer. Do not remove the lid during this time.

  Check for Doneness: After 15 minutes, check the rice. If it is not yet fully cooked and tender, recover the pot and add another 2 minutes to the cooking time.

  Fluff & Flavor: Once the rice is cooked, turn off the heat. Fluff the rice gently with a fork. Immediately add the 3 tbsp of fresh chopped cilantro and the juice of 2 limes. Stir these ingredients into the rice until well combined.

  Rest & Serve: Cover the pot again and let the rice sit for 10 minutes before serving. This allows the lime and cilantro flavors to fully incorporate.

Pro Tip: As a rule, any rice dish in which i use Jasmine rice, I use a ratio of 1 cup rice to 1½ cups of liquid.
