Bacon Cheeseburger Tacos Recipe
A delicious fusion of smoky bacon, juicy chorizo beef patty, melted cheese, and fresh toppings—all wrapped in a crispy flour tortilla. Think of it as a cheeseburger and a taco had the most delicious love child!
Ingredients (Makes 4 Tacos)

4 strips of bacon, cooked until crispy

8 oz ground chuck (80/20 blend)

8 oz chorizo, casings removed

1 cup shredded queso quesadilla (or Monterey Jack for meltability)

4 large flour tortillas (street taco size works too)

Burger sauce (mix mayo, ketchup, mustard, relish, and a dash of smoked paprika)

Instructions
1. Cook the Bacon
In a skillet over medium heat, cook the bacon until crispy. Remove, drain on paper towels. Reserve the bacon grease for cooking the patties.
2. Make the Chorizo-Chuck Smash Patties
In a bowl, mix the ground chuck and chorizo until well combined. Divide into four 4-oz balls.
Heat your preferred skillet or griddle over medium-high heat. Add a little bacon grease.
Place a burger ball in the skillet and smash it thin with a spatula or burger press.
Season generously with Blaxican Fajita Seasoning (or salt, pepper, garlic powder, and cumin).

3. Cheese & Tortilla Flip
Flip the patty and immediately cover with shredded queso quesadilla.

Carefully flip the whole thing so the tortilla is now on the skillet.
Sprinkle more cheese on the exposed side of the patty, then fold the taco in half.
Press down lightly and let it crisp up for about 12 minutes per side.
4. Assemble & Serve
Remove from the heat and open the taco slightly.
Spread a layer of burger sauce inside.
Add crispy bacon bits, pickles, shredded lettuce, and roasted mango salsa.
Serve immediately while hot and crispy!
