Instructions:
- Prep Pineapple: Grill pineapple slices on one side only.
- Prepare the Pan: Preheat grill to 350°F (175°C). Place a 9-10 -inch cast iron skillet in the grill with butter to melt.
- Make the Pineapple Layer: Sprinkle brown sugar in the butter to slightly coat the base of the pan. Arrange pineapple rings in the bottom of the pan with the grill marks facing away. Place cherries inside the pineapple rings.
- Prepare the Cake Batter: Prepare the cake batter according to the package directions.
- Pour Batter Over Pineapple: Pour the cake batter over the pineapple layer.
- Bake: Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and Invert: Let cool in the pan for 10 minutes before inverting onto a serving plate.
