How To Make A Fresh Chimichurri At Home: From Scratch

Beyond Steak: Exploring the Versatility of Chimichurri

Chimichurri, the vibrant green sauce that is originally from Argentina, is more than just a delicious topping for grilled steak. While traditionally featuring parsley as a key ingredient, this recipe offers a unique twist, showcasing the versatility of this flavorful condiment. The star ingredient here is cilantro, and boy it’s a banger.

This Chimichurri Recipe Reimagined

This version embraces the spirit of a traditional chimichurri – a vibrant blend of herbs, spices, and acidity – while allowing for customization to suit your palate. When you make this, feel free to adjust the ingredients to suit your palate.

Ingredients:

  • 1 cup chopped cilantro
  • 4 cloves garlic, minced
  • 1 red chili, minced (adjust to your desired heat level)
  • 1/4 cup red wine vinegar
  • 1/2 cup olive oil
  • 1 lime juiced
  • ½ shallot finely minced
  • Salt and pepper to taste

Instructions:

  1. Combine Ingredients: In a bowl, combine all ingredients.
  2. Mix Well: Whisk vigorously until all ingredients are well combined and the sauce is emulsified.
  3. Taste and Adjust: Taste and adjust seasonings to your preference.
  4. Hand chopping: You can mince, dice and chop all the herbs by hand but you can also use a food processor. I prefer the texture of the chopped more, but follow your heart. 

Beyond the Steak:

  • Compound Butter: Soften butter and fold in a generous amount of chimichurri. Use this on grilled bread, roasted vegetables, or even as a topping for fish. My recipe is here.
