Ingredients for Bone Marrow Chimichurri Compound Butter:

 Bone Marrow: Roasted and softened

 Unsalted Butter: Softened

 Chimichurri: Freshly made or store-bought. When making a chimichurri for the compound butter, there are a few things you want to consider. 

  • Only use a splash of red wine vinegar
  • I used the fat drippings from the roasted bones instead of olive oil to really amplify the beef flavor.
  • This recipe is completely customizable 

  Ingredients for homemade chimichurri recipe:

     1 bunch Fresh cilantro

     1 Shallot

     4-6 Garlic cloves

     2 tsp Red pepper flakes or 1 fresh chili pepper

     3 tbsp Red wine vinegar(Reduce for this recipe)

     Olive oil about ½ cup

     Salt to taste

 

Equipment:

  •   Mixing bowl
  •   Parchment paper
  •   Plastic wrap

Instructions:

  Roast the Bone Marrow:

  •     Preheat oven to 400°F (200°C).
  •     Place bone marrow bones on a baking sheet and roast until golden brown and tender.
  •     Remove from oven and let cool slightly.
  •     Scoop out the roasted marrow and set aside.

 

  Prepare the Chimichurri:

 

  1.     If using store-bought chimichurri, proceed to step 3.
  2.     If making homemade chimichurri, finely chop cilantro, shallots, garlic and pepper.
  3.     Combine chopped herbs, garlic, red pepper flakes, red wine vinegar, drippings from roasted marrow, salt, and shallots in a bowl. Mix well.

 

  Combine Ingredients:

    In a mixing bowl, combine softened butter, roasted bone marrow, and chimichurri. Mix until well combined.

  Shape and Chill:

    Transfer the mixture to a piece of parchment paper and shape into a log.

    Wrap tightly in plastic wrap and chill in the refrigerator until firm.

  Use and Storage:

  •     Slice the chilled butter and serve as a topping for steaks, roasted vegetables, or grilled bread.
  •     Store any unused butter in the refrigerator for up to a week or freeze for longer storage.
