  • Drippings from roasted turkey bones and skin

  • 2 sage leaves whole

  • 1 tbsp fresh garlic paste

Instructions:

  1. Skim the Fat: Drain the turkey drippings into a container after roasting skin and bones for stock, about 1/4 cup.

  2. Make a Roux: Use olive oil to sauté shallots and garlic in a large saucepan over medium heat. When the onion and garlic has become fragrant, mix in turkey drippings. Whisk in the flour and cook for 1-2 minutes, or until the roux turns a light golden brown, or the desired darkness.

  3. Add the Stock: Gradually whisk in the turkey stock, whisking constantly to prevent lumps. Add chopped sage and whole leaves. Bring the mixture to a boil, then reduce heat and simmer for 10-15 minutes, or until thickened.

  4. Season and Serve: Season the gravy with salt and pepper to taste. Strain the gravy through a fine-mesh sieve to remove any lumps or particles. Serve immediately over roasted turkey, mashed potatoes, or your favorite Thanksgiving side dish.
